Tea is still the nation’s favourite drink and the continued growth in Speciality Teas shows that more people are looking to try teas from the premium end of the market.

Afternoon tea is a favourite tea-drinking occasion with both UK and overseas tourists. Increasingly, afternoon tea is being seen as an integral part of the British holiday experience.

An increasing number of catering establishments are recognising the importance of linking their tea menu to food items in order to boost sales at off-peak times and satisfy the demands of tourists.

Certain teas work particularly well with particular types of food. The Academy of Food and Wine Service and the Tea Council recommend serving Ceylon tea with cucumber or tomato sandwiches and tarte au citron. Darjeeling tea works well with cream cheese or egg and cress sandwiches and cream desserts, while Earl Grey is the ideal tea to serve with ham and mustard sandwiches and desserts such as crême brulée.
