
Green Tea comes from the same tea plant as Black Tea, Camellia Sinensis, but unlike Black Tea, is not oxidised and therefore the colour of the leaf is preserved. Rather than oxidising, Green Tea is usually withered then either steamed or pan-fired to stop the oxidisation process.
